Lemon Cream Cheese Bars

One of my pet peeves is when you look up recipes for desserts... why do the majority of them have a "box" of ____ cake mix? Why would you pay 2.00 for 2 cups of flour and a boat load of "artificial" flavors and preservatives. Truth be told if you make your own, you might have .75 in all the ingredients AND you know what you are putting in there.

To make items from Scratch is not complicated, we have just been "trained" to believe that we do not have enough time to do it. For Convenience we have given up quality and nutrition. The TRUTH is that for you to make the cake / cookies / pies / breads or whatever from scratch really does not take that much more time! Okay maybe 30 seconds because you have to measure the ingredients instead of just pouring from a box..... but oh won't your family be amazed! The benefit is you do not have all the preservatives and the items taste so much better!

Lemon Cream Cheese Bars:

What you will need is:

 1 Cup Butter Softened
• 1/2 Cup White Sugar
• 2 Cups Flour
Mix together and press into a 9 * 13 glass pan. Bake at 350 for about 15 minutes

• 8 ounces cream cheese - softened
• 1 cup powdered sugar * 
• 2/3 Cup Lemon Juice
• 3 eggs
• 1 teaspoon vanilla
Mix Cream cheese until softened, slowly add 1 cup powder sugar. add in the lemon juice, eggs and vanilla and mix well. Pour over crust and bake at 350 degrees for 25 - 30 minutes. This makes a good sweet / tart bar. If you prefer sweeter add another 1/2 cup of sugar. You can also add more cream cheese if you want it to be a thicker bar.


Sprinkle with powdered Sugar once cooled - Enjoy.
* Tip you do not have to buy powdered sugar and pay 1.75 for .25 cents worth of sugar. It is real simple, take a couple of cups of your sugar, put it in your blender with your blade and mix it on the highest setting you have for about a minute, some blenders are faster than others. That is it! Put it in an air tight container and you have your powdered sugar!
